Fruit Salsa with Cinnamon Chips

I am not sure if I make this for the salsa (yum) or the chips (yum). They are both equally good and really work well together in this appetizer/snack/side dish/dessert. This is a HUGE treat for the kids, they actually could eat it all in one sitting IF I would let them…..I guess I could let them, it IS fruit! 🙂 Good to find nice healthy treats for the kids during these summer months when they are home and EATING so so much! This recipe is great cause it calls for ingredients that most of us probably have in our fridge/pantries at all times.

*The original recipe calls for 1 orange, peeled and chopped. I try to keep a can of mandarin oranges on hand for this recipe, it is just easier…so I wrote the recipe as I do it.  But you may use as orange IF you have it.

Fruit Salsa with Cinnamon Chips 
1 c. finely chopped fresh strawberries
1 can mandarin oranges, well-drained, chopped a bit
2 kiwi fruits, peeled and chopped
1 medium green apple, peeled and diced small
8 oz. can of crushed pineapple, drain well
1 TB. lemon juice
1 1/2 tsp. sugar
Cinnamon Chips….yum…..:
10 (8″) flour tortillas
1/4 c.melted butter
1/3 c. sugar
1 tsp. cinnamon
Combine the chopped fruit, drained pineapple, lemon juice and sugar. Put in a bowl and devour it cover it till ready to serve. Meanwhile, brush the tortillas with the melted butter. Combine the cinnamon and sugar, then sprinkle over tortillas. (I use extra cinnamon/sugar usually, yep guilty as charged….) With a pizza cutter cut into wedges, about 8 per tortilla. Place on a baking sheet and bake @ 350* for 5-20 minutes. Yep, big gap, DEPENDING on how thick or thin, big or little  your tortillas are ~ just keep an eye on them, checking every 5 minutes or so. You may need to move them around a bit if they are layered or crammed in there really good. Allow to cool and serve with the fruit salsa and enjoy…if you will. 🙂
