My boys are like most young kids, not the greatest eaters of veggies UNLESS of course it is smothered in dip or drenched in cheese! WHICH is not super-duper heathy. Here is a green bean recipe I have made so many times and they ALL eat it so so good! It is easy and quick to make, and healthy to boot! This recipe came from my “forever” friend, Carrie. Love to make recipes from friends and family, I always like to think of the people who I get recipes from….fun to imagine that food in their kitchen….I know……I know. Silly. I cannot be held responsible IF your child doesn’t want to eat plain green beans EVER again!
* I like to make it with fresh green beans WHEN I have them. Just cook ’em till tender, then dump into the skillet with the saute’d onions. Then add the rest and heat up.
* I don’t always use all the bacon. Usually I just use a small handful. Maybe a leftover piece or 2 from something else I had made. So use as little or as much as you would like too!
* I actually use more like 1/4 – 1/3 c. finely chopped onion, another thing you can sway on a bit!
Kid’s Favorite Green Beans
2 TB. finely chopped onion
1 TB. butter or margarine
16 oz. canned green beans, drained
4 slices bacon, cooked and crumbled
1 TB. sugar
1/4 tsp. salt
1/8 tsp. pepper
1 tsp. lemon juice
In a medium saucepan, saute the onion in butter till tender. Stir in the remaining ingredients. Cook until thoroughly heated. Enjoy!

Made this for supper tonight….served it with Grilled Pork and baked potatoes. Loved it! My kids turned up their noses until I told them it was called “Kids’ Favorite Green Beans” and then they tried it…and liked it! I doubled the recipe and it was GONE. I might have to triple it next time! Bobbi have you ever tried to bake this in the oven or keep it warm in a crockpot? I thought it would be a great dish to take to a potluck but it cooled off really fast, so I was thinking I’d have to do something different if I wanted to take it somewhere. Thanks for the great recipe! I’ll post a link to it whenever green beans and bacon go on sale next 🙂

I think that it would travel well in a crock-pot to a potluck dinner, I would just keep it on low and only for a couple hours ~ don’t want the beans to turn to mush! 🙂 I make it with fresh green beans too and I think that those will travel well too! Let me know if you try it traveling BEFORE I do! Thanks for the idea…Isn’t it funny how the kids do enjoy it when at first they think they won’t? ~ My kids turned their noses up at first too, but ended up asking for more and more! (I have never baked it, probably would crock pot it before baking it, just my opinion, but again, I would just say lowish temp for shortish period of time.)

My grandmother and mother made something similar always using fresh greenbeans from their garden and adding potatoes, cut up small enough so they would be done cooking the same time the beans were done. I still make it and use olive oil instead of butter, a more healthy fat. Good stuff!
